Roasted Garlic Cauliflower


  • 2 cloves garlic
  • 3 tablespoons olive oil
  • 1 large head cauliflower
  • 1/3 cup grated Parmesan cheese
  • 1/8 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 tablespoon parsley


  1. Preheat the oven to 450°F.
  2. Remove the skin from garlic. Scrub the garlic and cauliflower with a vegetable brush while holding under cold running water.
  3. Mince garlic in a food processor.
  4. Separate cauliflower head into florets.
  5. Grease a large casserole dish.
  6. Combine the olive oil and garlic in a large resealable bag. Add cauliflower to the bag and seal. Shake the bag to mix.
  7. Pour the cauliflower mixture into the prepared casserole dish. Season with salt and pepper.
  8. Bake the cauliflower for 25 minutes, stirring halfway through.
  9. After 25 minutes top with Parmesan cheese and parsley and change the oven setting to broil.
  10. Broil for 3 to 5 minutes, until the top browns.
